Red Velvet Cake ~ a Trim Healthy Mama S dessert

Red Velvet cake has been calling my name. 

I am not kidding when I tell you, I have been dreaming of

Red Velvet cake!

 

Christmas is not Christmas without it!

 

I told some of my blogging buddies that I was creating a Red Velvet Cake..

They have been patently waiting for it..

Here it is with just a few pictures I was able to snap before

it was devoured by my Church family.

Red Velvet Cake ~ S~

1 cup coconut flour

1/2 cup flax seed meal (I use golden flax)

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon salt

1/4 cup sweet blend ( I use my homemade sweet blend)

2 tablespoon unsweetened  coco powder

10 eggs

1 teaspoon white vinegar

1 oz. of red food coloring

2 teaspoons vanilla

1 1/2 cup almond milk

1/2 cup coconut oil (melted)

 

In a bowl, mix all the dry ingredients together.  Set aside.   In another bowl combine eggs, vinegar, vanilla.  Mix with electric mixer.

Stir in almond milk, and melted coconut oil into egg mixture.   Gently combine wet ingredients with dry.  Mix until its all combined well.

Stir in the red food coloring.  Pour into round, or square 9x13 pan.  Bake at 350 for  30 mins.

( Your baking time may be shorter or longer depending on what its cooked in.)

Cool, then frost.

 

Cream cheese Frosting

 3 tablespoons Butter ( softened)

1 – 8 oz. softened cream cheese

splash of vanilla

1/4 powdered sweet blend

 

Cream butter and cream cheese.  Add sweet blend and vanilla.

Frost…

This frosted one square 9x13 pan of cake.

Honey Bun for one

I used to love honey buns…

Well, lets be honest.. I still love them.

But I will not eat them any longer.

(They are not healthy for me… LOL)

Last week temptation.. (I resisted… yay!)  hit when I saw a lady in the store

chomping down on one… It got me thinking..

I could make me one.. right?

 

Of course   I could…

HONEY BUN for ONE  ~S~

 

for the cake:

1 tablespoon flax seed meal

1 tablespoon coconut flour

1 tablespoon oat fiber

3 teaspoon sweet blend

1/2 teaspoon vanilla

1/2 teaspoon baking powder

1 egg

2 tablespoon unsweetened almond milk

 1 tablespoon melted butter

 

Cinnamon Mix:

2 teaspoon sweet blend

1/2 teaspoon  cinnamon

 

 

Glaze:

2 tablespoon powdered sweet blend

1 tablespoon of softened butter

1 tablespoon  almond milk

 

 

Mix the cake ingredients together.

   In a sprayed ramekin, add half the batter, pour the cinnamon mix on the batter, topping with the rest of the batter.

Bake at 350 for 15 to 20 mins.  or Microwave for a min or so.. ( I don’t have a microwave so I don’t know the time it would take to get it done.)

Add Glaze to cooked cake…

Destressing the Holidays

 
 
Holidays can always become very stressful for us moms.
 
We find ourselves with a list of party invites, family gatherings, our shopping lists and  don't forget the Christmas play practices, and the Church Christmas party.
 
All this is added to what we already have on our busy plates.
 
Sometimes we find ourselves just overwhelmed with it all..
 
While I may not be able to help you with your lists, I do have a
few tips that can help you in the school department.
 
How to have a stress free Holiday School Season:
 
Lighten the load...
 
I have found that a lighter load of official school work.. is the key to a stress free month.  Who said that you have to do every subject
every day of every week of every month!
 
Lighten your load this month, you can always catch up later!
 
 
Enjoyable projects...
 
Find things that your child and you enjoy and do them...
My girls love to help me bake, so doing December, we spend a whole lot of time baking... getting ready for all those parties!
 
 
Or you can...
 
Take this  month off
 
I know may homeschooling families that just take the month of December off!  A winter vacation if you will..

Corn Bread Dressing ~ S

This is the most amazing corn bread dressing!

I mean amazing!  haha!

 

Look out Thanksgiving… THM corn bread dressing is in the HOUSE!

Corn Bread Dressing

serves 4

 

1 cooked batch of my corn bread

1 small to medium onion, diced small

1 stalk of celery, diced small

1/2 diced bell pepper

1 cup chicken broth

cooked and shredded chicken breast ( two will be fine)

3 tablespoons butter

salt, pepper and Cajun  Seasonings to taste

 

Sautee onions, celery,  and bell pepper in butter until tender and veggies are soft.

In a bowl, crumble up the corn bread.  Add your chicken.

When veggies are cooked add them to your corn bread and chicken.  Mix.. adding a little  broth at a time.

You want your mixture to be moist but now swimming in liquid.

Add more broth until its to your liking.

 

Pour in a small 8x8 pan and bake at 375 for 25 to 30 minutes.

or

until its brown on top.

Corn Bread ~ S

I love Corn bread!  I have tried and like almond flour corn bread recipes, but
my family does not care for it.
I have been playing with a “corn” bread recipe.
This recipe uses no almond flour!
It’s a win for this family.

“CORN” Bread

1/4 cup Golden Flax seed meal
( blend in blender for a finer meal, if you have texture issues with flax seed…)
1/2 cup oat fiber
1/4 cup coconut flour
1 teaspoon of sweet blend
( I like a sweet corn bread)
2 eggs
1/2 cup almond milk
2 Tablespoon melted butter
dash salt
1 teaspoon baking powder

Mix all wet ingredients, add dry… mix well. 
You may have to add a little more milk if your mix is not wet enough.  Use your own judgment.
Pour into a buttered, or sprayed  square 8x8 pan.
Bake at 375 for 15 to 20 mins are until done.
Add some butter on top while still hot.

This is a great complement to my BEEF STEW.

Are you Determined?

You might be wondering why  I have a posted this title.  Well, an old song has been playing in my head for the last couple of days and it has made me do some thinking.   So today’s post is just some of my thoughts that I hope will encourage and challenge you in the areas of your life that you might need to be come determined in.

In life if we don’t have a determination to do something's, then we will never accomplish anything!

The following are a few things I am DETERMINED to do:

 

FOLLOW CHRIST ~  When I came to know Jesus as my personal Savoir at the age of 10, I determined that I was going to serve Him no matter what.  My life was going to be a reflection of Jesus.  It has not always been easy, but I don’t know what I would have done in those times that I needed His guidance,  His direction, or His grace and mercy.   

 

HOMESCHOOL MY GIRLS~  My husband and I made the decision to homeschool our girls six years ago!  At that time I did not know what I was doing but we were determined to do it.  Yes, it takes sacrifice, money and a whole lot of determination on my part.   To be completely honest,  there were some days in the beginning that I wondered if I could do it.  I did it, I survived my first year and all the years after!  When you make up your mind and become determined… YOU CAN DO ANYTHING YOU SET YOUR MIND TO!

 

The last thing I have been DETERMINED TO DO:

 

TAKE BACK MY HEALTH!

That is where Trim Healthy Mama came into the picture.  19 months ago, I began the journey to take back my health.  A friend introduced me to Trim Healthy Mama by a post on Facebook.  She did not know it at the time but I was sinking in depression, leg cramps, aches and pains… and I knew if I did not do something to change my lifestyle I would end up a diabetic like my parents and many in our family. I am at goal weight!  I have lost to date 88 pounds.. yes even while trying to maintain and eating what we call Crossovers… .I have still lost a few pounds.

You see when I started my journey on THM, I determined that I was going to do it.  I determined that no matter what came my way this was going to be a lifestyle change for myself and my family.  In the beginning, it was not easy to resist the temptation of those chips at the Mexican café… or the Mt. Dew at the store.    Do you know what helped me?   I kept reminding myself of how I felt before I began THM, and how I feel now.  That was all it took for me to move those chips out of reach, or head for the water at the store.   It takes determination to stay on plan.  It takes determination to not cheat.   IT IS SO WORTH IT! 

 

I have been able to stay on plan and not cheat… yes in the beginning it was hard.. but after a few months.. this way of eating became my norm.  I have no desire for candy bars (while my husband still likes to grab a Snickers bar once in awhile at the store.) no desire for pizza, no desire for off plan processed foods… why  because my body feels so much better these days that those early temptations don’t  tempt me anymore.

Family Favorite ~ BEEF STEW~ S to S helper

My family loves beef stew with corn bread.
They really loves it.

I don’t know why I waited so long to tweak it.. but to be honest.. I was
a little scared of radishes.  I really don’t like them, but in this recipe they are devine…. haha!

This recipe is a S or S helper depending on how many carrots you  have in your bowl.

Beef Stew

2 lbs stew meat
1 small onion diced
1/2 bell pepper diced
6 carrots cut into chunks
2 bunches of radishes, cut in half
1 bag frozen green beans
1 small can of tomato sauce
Cajun Seasonings
Salt and pepper
1 teaspoon gluccie to thicken


Brown your stew meat in a pot big enough for the rest of the ingredients.
After meat is browned add onion, peppers, carrots to pot.
Sauté for five minutes.
Add radishes, green beans, tomato sauce, and water to cover.
Season to taste with Cajun seasonings, salt and pepper.

Simmer until veggies are cooked and meat is tender.
(around 30 to 45 mins in total)

When almost done, whisk in gluccie…   add more if need for desired thickness.

Lets Salsa

Lately, I have been abundantly blessed with tomatoes.
I love tomatoes, but I can only eat so many of them  
in a day...

My oldest loves fresh homemade salsa.
It was 
and is,( since I have been blessed with more tomatoes)
a great way to use up all those ripe, fresh 
produce.

`
 I make my salsa with my food processor.
I throw all my goodies in it and pulse away!

Shelby's Salsa

8 to 10 medium tomatoes
3 jahplono  peppers ( seeds removed)
1/2 bunch of calentro
1/2 of pruple onion
2 teaspoons of lemon juice

Breakfast Blackberry Cobbler ~ FP

This is a recipe I came up with eons ago.  Open-mouthed smile

 

I posted to the Fuel Cycle group  many moons ago..

 

Now I am going to share it here…

 

 

Blackberry Cobbler

  Mix 1/2 c blackberries with 3 teaspoons of truvia, erythritol, or homemade sweet blend

place in ramekin.

For topping: 1 tablespoon coconut flour,

1 tablespoon oat fiber,

1/4 cup egg whites,

1/2 t baking powder,

1/4 t cinnamon,

4 teaspoon of truvia, erythritol, or homemade sweet blend

pour over berries.

I baked mine for 25 mins at 350.

Now I love to cook and create wonderful recipes, but spending all my time in the kitchen cooking and cleaning is not my idea of fun.

But succeeding was not a choice for me. This was something I had to do for my health!

Waffle for one

I have another wonderful creative recipe to share today.

 

Today’s Recipe is a Waffle for one… its FP!

 

I had mine with two fried eggs and butter for a yummy S Breakfast.

Waffle for ONE ~ FP

 

1/4 cup Baking Blend

1 teaspoon baking powder

1 teaspoon coconut oil

1/4 cup egg whites

2 teaspoon sweet blend

(I used my homemade one.  If using THM’s sweet blend, one might be enough.)

1 tablespoon unsweetened of almond milk

 

Mix together and cook in your waffle iron!

What’s Thanksgiving without a Pumpkin Roll?

At our house… Pumpkin Rolls are a must have for the up coming holiday seasons!

I mean, We can spend a day whipping up a few dozen of these babies… and then freezing them

just to have on hand for a party, company, or just for ourselves.

Last Year, I was sad because I had to sit there… help with the prep.. and not get any… LOL

Last Week I decided to  try and create a yummy, delicious

THM PUMPKIN ROLL!

 

 

I have now made three of them… sadly they did not stay around very long!

Our family loved it! My husband said “It’s the best tasting

THM dessert you have made up to date.” 

This is my Trim Healthy Man… He loves most of the creations that come out of my kitchen.

I need to thank a few of my recipe testers.  Before I shared it

with all my THM friends, I wanted to see how it would work for someone else.

To be honest… it happens.. but with this recipe..

they have rolled for me perfectly each time.

To make this recipe, I came up with a baking blend of oat flour and oat fiber.

You can have a little of oat flour  or oats in a S setting, that means

using this blend I can have more than one piece at a time!

Loaded Sweet Potato ~ E

Looking for an easy dinner/ lunch meal. 

 

During your Fuel Cycle, it is easy to think your out of ideas of E type meals.

 

I saw a recipe that looked delicious,  but it was not THM friendly…

 

This is a loaded Sweet Potato, with a south west flavor….

Loaded Sweet Potato

 

Baked small to medium  sweet potato

1 can or freshly cooked black beans

Cooked and shredded chicken breast

Seasonings:

2 teaspoons of cumin

1 teaspoon of garlic powder

1 teaspoon onion powder

salt and pepper

1 teaspoon of butter or coconut oil

laughing cow cheese

 

For the Beans:

add a teaspoon of cumin, onion powder …. simmer for a few minutes

 

Add salt, pepper, garlic, onion, cumin to the chicken… sauté  for 2 minutes

 

Assembly:

* cut sweet potato, place butter or coconut oil , chicken , beans and one wedge of Laughing Cow cheese*

 

Enjoy!

 

This recipe is great for chicken and bean leftovers!

Deep S Brownies

I love brownies!

 

Brownies make me happy, happy, happy!

 

No longer do I have to keep the brownies away during my Fuel Cycle!

 

Enter:

 

Deep S Brownies

These came from a deep down craving for brownies during my last Fuel Cycle.

Deep S Brownies

 

1 cup Shredded Zucchini

A handful  of fresh spinach (to get those leafy greens in Winking smile )

2 scoops of why protein powder

2 TB cocoa powder

dash of salt

1/4 cup of Sweet Blend (homemade or THM blend)

1 teaspoon baking powder

2 eggs

1 teaspoon vanilla

2 tablespoon coconut oil

 

In a blender (or your magic bullet) blend eggs, spinach,  and zucchini until smooth.  Mix dry ingredients into bowl.

Add wet to dry, mix well.

Pour into an 8x8 square pan and bake in a pre heated oven at 350 for 15 minutes or until center

comes out clean.

 

This recipe makes 9 brownies.

 

 Brownie Bit Version:

 Using a Wilton Square pan or a mini muffin pan:  spoon a tablespoon of mixture into the pan.. cook as directed above.

It makes 22 - 1 tablespoon-size brownie bites.

Mexi- Cab Skillet Meal

 

If you have been on Trim Healthy Mama for any length of time, you know that the Fuel Cycle can be very challenging.

When I did my first Fuel Cycle, I was beyond worried about what if I was doing my deep S meals right.

That being said, I know that many ladies have trouble finding deep S recipes. 

I have decided to post some of my favorite Deep S recipes each week to help all my fellow FCers. 

Today’s recipe is a simple Deep S.

 

Mexi- Cab Skillet Meal

All you need is :

2 lbs. ground meat

1 head of cabbage

1 teaspoon cumin

1 teaspoon chili powder (less if you don’t like spicy food)

1/2 onion powder

1/2 garlic powder

salt and pepper to taste

1 tablespoon of coconut oil

 

Brown ground meat, drain.  Add your seasonings with a little water, simmer for 5 mins.

Sautee your sliced cabbage in coconut oil, cook until cabbage is cooked.

Toss cabbage and ground meat together and serve.

 

Easy, Simple meal you will enjoy!

Cinnamon Vanilla Pudding

This recipe reminds me of the Cracker pudding(without the crackers) my grandmother use to make.

Deep S Cinnamon Vanilla Pudding

 

1 egg yoke
1 cup almond milk
3 teaspoons of sweet blend (you might use less depending on how sweet you like things.)
1/2 teaspoon gluccie
1 teaspoon vanilla
sprinkle of cinnamon (to your taste)

In a sauce pan, whisk almond milk and egg yoke.. Add in your sweet blend…  turn heat to med heat. Whisk in gluccie.. keep whisking until it thickens up.

(it took me around 5 mins... all together for this recipe)

After it begins to thicken.. remove from heat and whisk in vanilla and cinnamon... serve warm or cool.

Enjoy!

A trip down Memory Lane

I have been so very busy lately, that I have just not had time to sit here and write…

 

Sorry About that!

 

Since we are on our third week of our school year, I started thinking back to 8 years ago when

our Homeschooling Adventure started.

 

Kalyn was in the 2nd grade, Janelle 6th…. time has flown by!

Kalyn is now in the 8th  grade and Janelle will be graduating this year!

 

I remember those early  not being able to get things done around the house during those school hours, because I was needed to teach.

Now, I am not that needed… and to be honest….  I miss those early days!

  Sad smile

 

My girls already know the routine.  They don’t really need to be reminded all that much anymore…

To be completely honest… I feel a little left out! HaHa!

 

This Mama is dealing with some growing pains!

 

My girls have turned into independent learners… that was the point I was trying to teach

them from the beginning.

 

I am thrilled they are excelling at their studies!

 

I have enjoyed the years of schooling… I have seen my youngest just blossom.

Where she once had trouble with Math.. she is now excelling!  She has just blown me away!

 

Our adventure is almost at its end.. before I know it.. both girls will be done…

I tend to enjoy each and every day I have left homeschooling them!

 

Take time and enjoy your little ones, while they are still young.. because before

you know it.. time has flown by.. and they are graduating!

Sometimes you just have to do something Selfish

 

Sometimes YOU just have to do something SELFISH!

REALLY SELFISH….

like lock yourself in your room… and make something for yourself  Winking smile.

I have a Pinterest board labeled SELFISH SEWING.

Its what the label says… selfish stuff for me, myself and I.

I loved this lunch bag that I came across a few years ago.

(Yes its been pinned for that long! Sad smile)

I finally decided to do it!  Its very simple, easy to construct, with great instructions.

Happy Trimiversary To ME!

I can not believe a year has passed since I began Trim Healthy Mamma.

As I looked at the pictures of me, I can not believe the change.

This Picture was me a few months before I started… Wow!

I remember the feeling at a loss of what to do?  I knew I needed to do something to loose weight, and gain my health back. I remember asking my husband if we could afford Weight Watchers…I did not know if I could do it really. 

I had tried other things to loose weight, but I would get frustrated after a few weeks and give up.

When I saw a facebook post from a friend talking about Trim Healthy Mamma, I knew I needed to see what It was about.

I can tell you this, buying THM was money well spent!  It has paid for itself over and over again.

 

This journey to becoming a healthier me has been fun!

 

I love the way I am feeling these days… Yesterday I walked two miles without realizing it! A year ago, I would not have

been able to walk a half of mile without my legs cramping and my body hurting… or running out of breath.

 

 

I love that I can now squeeze myself in a small booth while eating out with the family.

 

I love that I get to shop for new clothing  every few months!

 

I love that I have energy! 

 

I love that I feel Healthier!

 

I love the THM food! I love to try all the new recipes that show up in the THM Support group on Facebook.

 

I love that I am never bored with the choices of food  I have to choose from… what am I going to eat today.. its always new and exciting!

Most of all… I love that I have lost 69 lbs with THM!  (that last pound to 70 is being so stubborn!)

 

I started out as a size 20 – 22 Woman’s… now I am in a Misses size 12!

 

 

I still have a few more pounds to loose to get to my weight goal…. but this has been so much fun, I know I will reach it before long!

Trim and Healthy Menu

I love Menu planning! It helps me to keep switching  things up.  If I don’t write a menu, I tend to stay on one meal type… mostly S meals. 

 

I decided to share my menu for the coming week.

 

Sunday: 

B- (FP) overnight oats

L- (S) grilled salmon with a salad

D- (E ) Un- Stuffed Peppers

Snacks- FP cakes

 

Monday:

B- (E ) Buttermilk waffles

L- (FP) cob chicken salad on low carb tortillas

D- (S) Hamburgers  with steamed broccoli

D- (S) smothered grilled chicken breast  topped with sautéed mushrooms and green beans

Snacks-  Dashing Dish protein shake, FP cakes

 

Wednesday:

B- ( E ) berry baked oats

L- (FP) grilled salmon with salad pg 284 in THM book

D- (S) Philly Beef Skillet  with steamed veggies

Snacks- gluccie pudding, chia pudding

 

Thursday:

B- ( S) muffin in a mug

L- (e ) Parmesan Herb Chicken with baked sweet potato

D- (E ) Bean/ Beef Burritos

Snacks- FP chocolate cake

 

Friday:

B- ( S ) muffin in a mug

L- (E ) Asian Stir fry with brown rice

D- ( FP) Pita pizza

Snacks- FP cakes

 

Saturday:

B- (S) Breakfast taco

L- (S) pita sandwiches

D- (S) baked whole chicken, mashed cauliflower, green beans

Snack- FP lemon cake

Hamburger Skillet Meal for the frugal family

This recipe has been a family favorite for many years.  A friend prepared this dish one day while we were visiting

and we just fell in love with it.   The ordinal  recipe calls for white potatoes, and since my husband and I

don’t eat white potatoes anymore, I decided to tweak it a bit and see how it came out.

 

For my girls, I just made them there own little skillet meal with a few white potatoes.

Hamburger Skillet Meal

 

1 lb. of ground meat

3 to 4 medium sweet potatoes, sliced

1 small onion, sliced

1 bell pepper, sliced

2 to 3 carrots, sliced

fat free cheese to sprinkle on top

1/2 to 1 teaspoon of poultry seasonings (to taste)

salt and pepper to taste

 

Brown the ground meat, drain and rinse with hot water to remove the excess oil.  Rinse your skillet as well.

Pour meat back into pan add onions, peppers, carrots and sweet potatoes.  Add your poultry seasoning, salt and pepper.

Cook until all veggies are tender.

You may have to add a tad bit of water to help with the cooking.

 

Serve with a sprinkle of fat free cheese on top.

 

*For my girls, I divided the meat in half into two skillets and used white potatoes for them.*
