Trim and Healthy Chocolate Muffins- E style

 

Eating Healthy can be costly to your pocket book.  I have a monthly budget for our groceries each month. But with the holidays, I went over! Yicks!Annoyed   So for January.. I need to cut back and get it under control.

I like to plan a menu out for each month, it helps me stay within my budget.  As I was planning January’s menu, I ran across this recipe for Chocolate muffins on the THM facebook group. This recipe has everything a frugal mom (working on a smaller budget) wants.   Thank you Melissa for letting me share this recipe!

Chocolate Muffins – E Style

1 3/4 c oats

3 egg whites or 1/4 cup of egg whites from the carton

3/4 c unsweetened cocoa

1/2 c unsweetened applesauce

1 t vanilla extract

1/2 c plain Greek yogurt

1/2 t cream of tartar

1 1/2 t baking powder

1 1/2 t baking soda

1/4 t salt

1 c hot water

1 c erythritol

2 servings of Kal Stevia (optional.. its for added sweetness)

 

Pour your oats into a  blender and blend until it’s a powder. Now you have oat flour.  Remove from blender into a bowel and add the remaining ingredients.. or if your like me just add the rest of the ingredients to your blender and blend until combined.  Place in lined muffin tins.  Bake at 350 for 20 minutes are until done. 

*I was able to make a dozen and a half.*

 

These are very moist muffins.  They are so yummy you can serve them for dessert after an E dinner!

  1. Can you use truvia in place of the erythritol I dont have any. I have Truvia and stevia extract powder???

  3. I'm saving this! Thank you so much. Just wanted to point out that for an E you want to specify the 0% Greek yogurt. For newbies it's an important detail. Again, thank you for this, they look wonderful! :)

  4. Anonymous, as the author hasn't replied yet (unless she has, privately), here's my opinion. Truvia is erythritol mixed with a bit of stevia, so is a fair bit sweeter than erythritol alone. The stevia here is optional, and if added would make the sweetening close to using Truvia. My jar of TruviaI says to use 1/3 the amount you would of sugar, and erythritol is a little LESS sweet than sugar. So I would start with 1/3 cup of Truvia, allow to dissolve, and then taste the batter for sweetness. The commercial egg whites are pasteurized so if you use those you can taste the batter raw. If you bake it and it's not quite sweet enough, you could add a sweet topping when you eat, and use a little more Truvia next time you make them. I hope it works out for you. :) Maybe if someone tries this recipe with Truvia they can post their results here.

  5. Sorry, I just found this comment.. Yes you can use Truvia in place of the erythritol. Start out with less, than add more if needed. If you use the truvia you will not need to use the stevia.

  6. When going to this page, there is a moms bloggers club box that goes over the amount of oat flour. Can someone tell me, is that 1/4 c. or 3/4 c.? I figure it's probably one of those, maybe it's more like 1 1/4 c. I copied and pasted it and it still doesn't say. I want to make this for tomorrow so can someone who sees the amount, let me know? Thanks!
